Hot lightning (Hete bliksem) *

The second recipe that Karen wanted from me, comes from a recipe book that I once wrote for my children.
She also liked the name of the dish, as it is called: Hete Bliksem in Dutch.
Literally translated that would become: Hot Lightning. But that sounds a bit strange to me.

Hope your kids like it Karen!


Ingredients:

1 kilo floury potatoes, peeled and cubed
500 gr. sweet apples, peeled and quartered
100 gr. smoked bacon dices
1 large beef bouillon cube
1 dash ground nutmeg
fresh ground black pepper
1 table spoon mustard
some milk

Preparation method:

Place the potatoes and apples in a large saucepan; add enough water to cover. Bring to a boil, cover and cook for 20 minutes or until tender. Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Remove to paper towels, drain, reserving the drippings.
Drain the potatoes and apples. Add the dripping, a little bit of milk and the mustard and mash until smooth. Add the bacon and season with the black pepper and nutmeg.
Tastes real good with black pudding!
